Serving up the Finest Wines up above 40,000 feet

Traveling on Emirates should be about a Total Experience. Like a “jigsaw puzzle”, from the moment the chauffeur pick you up from your hotel, to the checking-in process, right up to boarding the plane and enjoying the in-flight entertainment, everything revolves around our Clients’ Experience and every part of the “jigsaw puzzle” should be complete – Mr Robin Padgett, Senior Vice President, Aircraft Catering, Emirates.

Last week, our writer at The Drinking Market had a long-distance phone interview with Mr. Robin Padgett, Senior Vice President, Aircraft Catering at Emirates. Let’s hear what he has to say:

Qn: How does having a whole range of reputable wines benefit a consumer? Is there a wine pairing option on-board the plane?

Ans: In Emirates, we always believe in giving our clients an experience just like a night out in a fine-dining restaurant. Balancing our wine list, we carry wines from both New and the Old World, focusing on both quality and balance. In fact, we normally buy our wines 8-9 years prior to serving them, this does not only ensures that we have the sufficient quantity, but it also ensures that there is a proper storage facility and minimal movements to the wines when we keep it at our private cellar.

Back to the question, Emirates does something a little more interesting, for instance, a trip to Europe, we will feature a more popular wine from the particular country or region, such as a 1996 Chateau Montrose for a flight to Europe! Our clients would not only be able to experience a whole list of well thought through wines, but also some interesting vintages from the wineries in the country they are visiting. Having said that, we do not have a fixed wine-pairing menu on-board the plane, however, our team of air crews have been through strict trainings on wines and spirits, and should be able to do a simple pairing with the meals provided. On top of that, we also recommend our clients to have fun with the pairings, a seafood dish does not necessary have to go with a white wine, try a pinot noir (red) from Burgundy, it’ll definitely go well as well!

Qn: Can the consumers be expecting reputable wines from back vintages?

Ans: Definitely! As mentioned earlier, we often purchase our wines at least 8 to 10 years prior serving them, and we usually store it at our private cellar in Bordeaux or Dubai, a good example is the 2000 Cos d’Estournel that we are currently serving, it was bought 6 to 9 years ago.

Well, since you’re based in Singapore, let me share with you an example of what we serve on-board Emirates on your flight home.

Qn: Storage of wines on board the plane

Ans: This is definitely one of the best questions, and i am glad you asked that. In Emirates, we take very close attentions to the quality our wines, in fact, we have a strong supply chain system from Dubai which transports the wines on-board the plane through a temperature controlled cargo, which our crews ensures minimal movements to the wines, so as to provide our clients with the best and the most optimal wine experience.

Qn: What triggered the move to go into fine wines on board a plane?

Ans: We have always been serving great wines on-board our planes, however, on a recent note, we are consistently finding the best solutions and strategies to improve our wine programme. The in-house team is one great example, we believe in the “jigsaw puzzle” concept, and wines are part of the “jigsaw puzzle” for a Total Experience

Qn: How does a palate differs at 40,000 feet in the sky compared to tasting a wine on the ground? Do the in-house wine team fly to taste?

Ans: There are many school of thoughts about one’s palate that will be affected on-board the plane, however, we do not see that as the main issue, in fact, all our wines are chosen on-premise. Nevertheless, our panel, that includes the President of Emirates travels alot, thus, if any one of us were to spot a wine that does not taste necessary well or doesn’t justify the wines’ potential at 40,000 feet, we will definitely have it replaced.

Having said that, it is uncommon and extraordinary to have a wine that “does not fly”, therefore, we’re glad that the wines we choose have been well-received so far!

Qn: What can consumers expect to get in the future?

Ans: I hope that our clients would happy with the service and in-flight entertainment we have on-board Emirates. In the near future, our passengers would definitely be able to enjoy and experience more interesting wines and back vintages from both renown and artisanal wineries. The World is our playground, we will consistently find the best wines to list on board the plane.

Qn: Anything else that you wish to tell our readers?

Ans: Yes! I would like to encourage our passengers to go through our wine list, and flip through it, there are definitely more interesting wines and spirirts that is worth a try. Do not just stick to the common ones that you have heard or seen, try something different, whatever you taste on-board, would definitely taste just as well on land.

Katnook Estate Wine Dinner @ Skyve Wine Bistro

No!! I haven’t been procrastinating!!

In fact, i have been really busy with meetings, consultancy, interviews, fell sick, etc.. etc… ok! No excuses! Back to what i was suppose to be doing. WRITE!!

Hahaha!

I was really fortunate. Fortunate to be invited to this wine dinner early last week, together with Crystal Wines and Skyve wine bistro, we were all treated to a wonderful dinner with great wines and food, compliments from Katnook Estate and the artistic creation of flavours by Chef Jachin, brother of Celine, owner of Skyve Wine Bistro.

The brother & sister duo did made an impression on me, so much so that i went back the very same weekend to savour their brunch menu!

Situated right in front of the Anglo Chinese School (Junior), Skyve is just like a quaint little “garden restaurant” that is hidden away from the hustling bustling city full of honks, exhaust fumes and stressful people walking all about.

Blessed with natural greenery surrounding the Bistro, Skyve’s ambience was perfect for a family brunch/lunch out in the day and a romantic setting with natural light passing through the large glass panels accompanied with the warm interior decorations within the restaurant for couples who plan to have a romantic night out. Most importantly, the whole set-up of the restaurant -as mentioned by Celine- was to give diners their privacy, not pushing to the limits of having too many tables and chairs that you could perhaps hear what’s the other couple’s “plans for the night” -~Cheeky!

sounds like a fairytale… but yeah, it’s true! TRUST ME, i was there during both the daytime, and also at night, i had nothing, but praises for the 20 month old bistro. No wonder they have so many regulars who comes almost every other day!

Back to the wine dinner. Glad that Celine enjoys wines, the pairing for the night was indeed the highlight! I’ve been to wine dinners, in fact many that really disappointed me. Not because either the wines or food was bad, it was just that the whole experience of pairing was off, and it kinda misrepresented both the wine and the food as a whole.

Let’s begin with the menu!Image

WAIT!! I have to say something very important! – Their bread was really really REALLY good! – Sorry, just needed to say that because some other restaurants, sadly serves cold bread that’s really uninteresting… Always remember, in a french setting, bread is often the first “dish” that is served to a customer, and it sets the expectations. A bad bread = to a bad first impression. So never forget the simplest things, it all makes a difference!

Katnook Founder’s Block Sauvignon Blanc 2012

Aromas of green apples, lemon, citrus fruits. Secondary notes of freshly cut grass and a hints of thyme. Beautiful acidity with apple notes and a slight hint of lime on the finish. Paired with our first course of Parma & Watermelon. Acidity of the wine cut through the richness of the Parma Ham while keeping the freshness that matched well with the watermelon, opening our appetite for the dinner ahead!

Katnook Estate Chardonnay 2011

A very old-world styled wine with notes of vanilla, oak, hazelnut and white mushrooms. On the palate, creamy and rich with a good touch of acidity and nuttiness. Paired with Escargot Bourgogne that was topped up with a rich garlic butter & herb sauce. Perfect pairing! Richness of the sauce was well balanced by the creaminess of the Chard while the fresh acidity in the wine flushes the flavours of the garlic and herbs, refreshing the palate for next course!

Why an astrix beside the wine? Well, it’s because i personally felt that the 06′ Merlot was really showing well for the night! Aromas of prunes, dark fruits and violets, the flavours were subtle, yet complex. On the palate, smooth and light to medium-body, silky tannins with a long finish, Indeed a perfect wine to just sip along for the night. Surprisingly, the choice of pairing for the wine was to go along with a herb crusted sea bass & pineapple pomegranate salsa. One who is bias and follows the book would probably think how on earth would this pairing even complement each other. We were always taught white wine with fish or white meat, the most you would go is perhaps a light red such as a Pinot Noir. But you’ll be surprise how well the Merlot complemented the fish in this case. Professional and daring, Chef Jachin went ahead with the choice of fish to go along with the Merlot, he made it right on the spot! To my surprise, because the wine was so light and smooth, tannins were almost soft enough to go along with the fish, adding on to the dish, the salsa which had a little spice in it, lifted the whole experience of just having a plain fillet of fish with butter sauce. I reckon that that was the whole reason why it went so well together. Claps!!

Katnook Founder’s Block Shiraz 2011

Black pepper, capsicum, cumin, star arneis and hints of earthiness, the wine was big, full-bodied and rich. A good balance of acidity and tannins, this wine could perhaps be aged for another 10-15 years, if not, decant it for 2 hours to enjoy if you have to open now. Paired with the oxtail & maple glazed sweet potato. The tannins of the wine broke down the proteins and richness of the oxtail while adding some spice to the rich red-wine sauce that was accompanied with the meat. Ending off with a bite of Maple Glazed Sweet Potato, my whole palate was exploded with flavours! I loved this! The pairing of having a full-bodied wine with a rich red meat was just right for me!

Katnook Odyssey Cabernet Sauvignon 2008

Pepper, cigar, capsicum, mint, cocoa and dark fruits, the 08′ Cab Sauv was rich and full-bodied with a med-long finish. Paired with crispy Kurobuta pork cheeks & pommes puree. My honest opinion, probably not the best pairing compared to the previous few mentioned above. The flavours of the pork was really good, in fact the 12 hours sous-vide method that Chef Jachin used really enhanced the flavours of the pork cheeks, but sadly, the Cabernet Sauvignon was a little more full-bodied and rich, the flavours of the meat was slightly masked by the wine. Nevertheless, if you were to have them individually, they are really good dishes and wines on its own.

Your Virtual Bangkok Guide

Hey all,

First of all, i have to say that this post is gonna be a very very VERY long one. So be patient and take some time to read it, if you’re busy rushing around town, then leave it till you’re home and continue reading.

WHY?

It basically sums up the entire 6 days i had in Bangkok, compliments to the ladies in the trip who prepared the itinerary. In this post i’ll be sharing just some of the MUST GO & MUST VISIT places in Bangkok, probably not the common Pratunam Market or Platinum Fashion Mall that has already been overrated and over-talked about.

*By the way, in some of the post below, you will be seeing “$” signs, well, what it actually means is how expensive the place/food is. They are all out of FIVE. An example would be $$/5, meaning two out of five in terms of pricing.

So here we go! Enjoy your little virtual trip to Bangkok!

As we depart from Changi Airport, remember that the closing time for the counter for Jetstar/ Tiger Airways is forty-five minutes prior to the departure, we kinda missed the time, so we had to buy another set of tickets to catch the next flight to Bangkok via Thai Airways. *Quick facts Note that Bangkok Airways is a much more expensive airliner, so make sure you choose wisely.

Off we go and within 2 hours, we were already in Suvarnabhumi Airport, Bangkok. Do note that there are two main airports in Bangkok and the latter is the Don Muang Airport, so make sure you are at the right place when you arrive or depart!

ACCOMMODATION

Thanks to Airbnb, we had our accommodations settled, an apartment right along Sukhumvit Rd, City Home, just a 3-5 minute walk from the Udomsuk BTS. Quiet, yet convenient, it was one of those places along Sukhumvit road that is less noisy and a little more peaceful. You can easily catch a taxi outside the apartment within a minute or two if you’re too lazy to catch the BTS, having said that, our experience tells us that if you’re going in a group of four, it might even be cheaper to travel via the Taxi, but remember, be firm and make sure they use their metres! A rough gauge for a taxi ride down from the apartment to the Asok BTS (Terminal 21 shopping mall) would be around 100-120Baht.

What’s more to this? Well, if the peace and convenience does not excites you, how about a fully protected building that is monitored closely 24/7 by guards who are situated straight at the entrance of the building?! We went out partying till about five plus to six in the morning and never have i once seen the Guards asleep! If that’s not secured enough, to enter into the tower, you have to register your finger prints at the management office which only then allows you to enter the building. So no worries about security, you’re well covered!

More importantly, for the convenience of the travellers who requires Wifi, you’ll be happy to know that Feb, the owner of the apartment has installed a Wifi connection so that you wouldn’t need to worry if you’ve gotta make any last minute google checks on your travel itinerary!

and lastly, YES! the apartment is child-friendly! So families who are thinking of a vacation out of the ordinary hotels which allows you to do some light cooking or heating-up some late night supper, this is definitely another option for you! $$/5

TAILORING:

Just right beside the Asok BTS, there’s a whole option of tailors for you to choose from, but after walking the streets, we decided on ZERUTTi Tailor, managed by a family with over five generations of experience in tailoring, we knew instantly that we were at the right place. Focusing on quality versus quantity, i believe they are not the cheapest, nevertheless, they definitely give you an option to choose your fabrics, depending on whether you wanna go down to the low-end fabrics or choose something a little more expensive, but a deserving quality. Something different about them – For the men/ladies, we often choose to have either the buttoned or cuff-links set on our sleeves, but the tailors at ZERRUTTi would make your worries lesser by incorporating both the cuff-links and buttoned-on options onto your sleeves. Meaning, you’ll get two in one!

I decided to make 2 shirts, 2 suits and 1 vest, all in all, i spent 11,500Baht – approximately around 370USD. Definitely worth it! $$$/5

Getting around Bangkok and eating as you walk is definitely not something extra-ordinary, but choosing the places to eat – wisely – is definitely worth sharing. During this trip, we visited more then a handful of restaurants and street-side stalls, but i’ll just share a few that’s worth your time looking for and perhaps you would share it with your friends and maybe call me to join you in time to come!!! Slurps!

1. Gold Bay Leafs – A street stall, perhaps you’ve have had many of them in Bangkok, how about enjoying Thai street food cooked by a Chef who have been spending almost all his life mastering his craft in a 5-star hotel before setting up his own humble cafe/restaurant?!

Yes, you’ve got it and it’s Chef Chai Boonlert, a former hotel chef turned restauranteur who decided to move out of  the corporate ladder in the hotel and create something of his own! Gold Bay Leafs Restaurant, one of the best in the trip we had so far. Affordable price with dishes that is a fusion of both Thai and Western style cooking.

2. Ban Khun Mae Thai Cuisine – Situated just in the heart of Siam Square lies Ban Khun Mae that oozes Thainess through its every sculpted wooden panel, its white and blue crockery, its aunties shaping dumplings behind a wall of jars filled with relishes, its display of chuam (vegetables boiled in syrup), its classical musician (daily at 7pm) and its staff in traditional outfits. Tourists love it, and you do get the occasional table of well-to-do Thais, in fact, when we were there, we had a group of Singaporean businessman who were in a private room having dinner. But for Ban Khun Mae to be a hit with locals it would have to seriously overhaul its service and parts of its menu.

I have to admit that the food here is by far the BEST i’ve had in this trip. From the fish and crab cakes to the steamed snapper with lime, not forgetting the deep fried marinated chicken wrapped in pandanus, NOTHING went wrong at all!

3. Roast – Trying hard to find a decent place in Bangkok that offers you perfect poached eggs? You’re in for a treat at ROAST. From the well poached eggs to the artisanal coffee and the huge window-space, there’s probably nothing you can ever complain about other then taking too many pictures of the décor!

Roast combines artisanal coffee-making with excellent brunch and tapas offerings. The pride and joy of this enormous, huge-windowed space is the giant black and gold coffee roaster sat along the back wall, and its hipness appeal can only be described as the caffeine equivalent of a vintage Vespa. The rest of the décor is all straight lines, marble tables and retro café chairs. It is the sort of space where one can seamlessly transition from Wi-Fi-ing with a cup of coffee to brunching with friends, to dining with your special someone.

If you’re in for a lazy weekend or a cuppa to ease your hangover, try heading down to ROAST!

4. Vanilla Brasserie – OH MY CREPES!

Yes, after a long day of shopping at Siam Paragon, why not take a break at Vanilla Brasserie?!

Situated just at first floor stands a brasserie that combines both European sensibilities with a mix of fashionable youngsters. Coming into the restaurant just makes you happy! If you’re in for something hearty, you might wanna try out their savoury crepes or pastas, but if you’re in for a sweet tooth like me, go on and order their DESSERT CREPES, no regrets!

However, having said that, all along Bangkok, you’ll definitely find street stalls that serves crepes for just barely 80 baht, so if you wanna spend a little more and enjoy a little bit more comfort, don’t hesitate to check them out!

5. Mr. Jones’ Orphanage – just for the fairytale fantasy

Honestly, i must start by saying that if you’re in for a fairytale experience, you could check out Jones Orphanage. Coming into the cafe brings you (ladies) back to your childhood day with soft toys placed on every chair and a fairytale decor. Desserts weren’t exactly great, i thought that the cakes were a little too dry, but just by looking at them would definitely make you salivate!

Whether or not it’s worth a try, it’s entirely up to you, to me… probably i set my expectations pretty high on this, i’ll choose to pass the next time!

1. Terminal 21 – If you’re into a theme-based shopping mall with food from all across the Globe, you’ve got it now! Terminal 21 brings the dream of traveling the world to downtown Bangkok, with its cutting-edge concept that places several world-famous cities under one roof. Find yourself wandering around a maze of shops in Tokyo City, sauntering down London’s Carnaby Street, bagging a bargain in an Istanbul zouk, or shopping for something to fill your growling stomach at the Fisherman’s Wharf in San Francisco.

Part of the same building as Grande Centre Point Sukhumvit, Terminal 21’s curvilinear glass-and-steel façade resembles a 21st-century airport, and the theme continues once you step inside. The floor signs that signal the arrivals in particular cities, a crisscrossing network of escalators, electronic display boards that bring to mind flight information displays at an airport terminal and the information desk receptionists donning air hostesses’ uniforms – these are all part of the shopping experience at Terminal 21.

The nine floors at Terminal 21 house some 600 shops, a Cineplex, Gourmet Market (supermarket) and a food court with all kinds of mouthwatering Thai and international fare. The basement level (LG) has a Caribbean theme and is where you will find the Gourmet Market, take-away food outlets, market-style food vendors as well as banks and bookstores. Take an escalator up one level and the ground floor (G) brings you to Rome, with all kinds of international and local fashion labels such as Kipling, Fox, CC:OO, Nike, Jaspal, Adidas, Levi’s, and more.

Paris on M floor takes you to the Champs-Élysées, where more fashion brands await your discovery. The 1st to 3rd floors are home to smaller shops by local independent labels. Women’s fashion is found on the 1st floor (Tokyo) and men’s on the 2nd floor (London). The 3rd floor (Istanbul) is for gifts, jewellery, fashion accessories, toys, beauty products and home décor. With an eclectic collection of shops, this floor has a look and feel of a Middle Eastern zouk but with a modern twist.

Now to the main highlight, San Francisco on the 4th and 5th floors, where you will find more than 50 restaurants and cafés vying for your attention. Both restaurant chains and independent outlets are represented here, among them Pepper Lunch, MK, Chabuton, Dory Seafood Bistro, Secret Recipe, Tohkai Yakiniku, Tony Roma’s, Fuji, Ootoya, The Canton House, Baanying Café and Swensen’s.

If you like a food court experience, head up to Pier 21 on the 5th floor. This is perhaps the best food court in town in terms of price, taste and variety. All in all, Terminal 21 is a delightful shopping and dining experience. It has particular appeal for the younger generation of shoppers, specifically university students to young executives. The diversity is good and price tag even better. 2. Rod Fai Night Market – Vintage is the way to go!

An open-air bazaar set beside an abandoned railroad track, the vintage look never goes out of style. Spread on the ground is all kinds of collectibles and memorabilia from the yesteryear, from antique furniture to hippy fashion to Mao kitsch. Rod Fai Market definitely stands out from the hordes of outdoor markets across Bangkok but it could be hard to find, as it’s tucked behind what appears to be an abandoned warehouse near the Chatuchak Weekend Market.

Taxi drivers usually don’t know it exists and will probably give you a blank face if you mention it, so the best way is to start at the MRT underground’s Kamphaeng Phet Station (opposite Or Tor Kor Food Market) and walk about five minutes in the opposite direction of Chatuchak Market.

There are two sections to the market. Facing Kamphaeng Phet Road, the front section occupies a large empty space that looks like a parking lot. Here, market vendors display their collections on the ground or on makeshift props like wooden crates, pallets and retro cars. But don’t just stop there: Venture further in, down a narrow backstreet and you will get to the abandoned warehouse where even more vendors and goods fill the entire area that leads to the old trains and railroad tracks.

The variety of products available is impressive. You will find everything from household goods, old electronic appliances and used auto parts to secondhand clothes, shoes and fashion accessories – all vintage style of course. Many vendors are also collectors of vintage items, so it’s not uncommon to see hobbyist items such as old cameras, bikes, Coca-Cola collectibles and Japanese anime toys on sale as well.

While shopping is the main highlight at Rod Fai Market, you might not want to miss out on street food here. Makeshift bars with cheap cocktails and drinks, barbecue stands with sizzling meats, fried noodle stalls, ice cream parlours, drink stands with foaming Thai iced-tea and coffee are wedged in at random spots among the goods as well as lining the back row next to the train. Each vendor employs various design gimmicks – from classic Volkswagen campers to old train bogeys – to attract potential diners. A few bars are set up in a cosy corner with wooden stools and reggae tunes. Even if you don’t feel hungry or thirsty for a drink, you will find it irresistible to take a few bites.

For many, Rod Fai Market offers a real unique shopping experience. But more important is you don’t even have to be into the vintage goods to enjoy shopping here. The charm of the place, the chilled-out atmosphere and the spirit of the people who gather here will live long in your memory.

3. Asiatique & Calypso Cabaret – Situated along the banks of the Chao Praya River stands Asiatique The Riverfront. Inspired by the history back to the 1900s of King Chulalongkorn who decided to raise Siam to another level in the World, and decided to establish relations with Denmark. Included in this process was the construction of a pier belonging to the East Asiatic Company, a business dedicated to the export of teak wood and owned by Mr. Hans Nille Andersen, a Danish national.

Today, that same area which the East Asiatic pier occupies is being restored to its original glory under the name “ASIATIQUE The Riverfront,” the first and the biggest lifestyle project in Asia on the banks of the Chao Phraya River, and soon to become Bangkok’s trendiest landmark.

And if you’re already planning to head to Asiatique, don’t hesitate to watch the Calypso Cabaret show for only 900baht!!

Calypso Cabaret Show at Asiatique gives you one of the warmest welcomes you can find in the land of smiles and does so in many different languages. Thailand is well known for ladyboys and Calypso showcases them doing what they love the most: dressing up to the nines and miming to Cher. Some of these ‘ladies’ have features that would make women jealous but this is an attractive illusion; they were all born men. The performers are keen to entertain and put on a good show and the best way to enjoy it is to don your imaginary feather boa and embrace their world of glitz, glamour and over-the-top drama.

To get to Asiatique, you can take the BTS to Saphan Taksin and walk down to the harbour to take a free ferry that brings you to the Pier in Asiatique!

2. WTF Cafe & Gallery – WTF Café and Gallery opened after four friends decided that Bangkok was lacking somewhere to eat, drink and be artistic. Its success is down to the relaxing atmosphere they have created – a lot of good things come from working with people you like. WTF has an innovative cocktail list and some tasty tapas comfort food – two more reasons it has become a firm favourite for both locals and visitors. It is a short five-minute walk from Thong Lor BTS on Sukhumvit soi 51 and a great place for drinks and dinner in an unpretentious setting.

3. Purr Cat Cafe Club – Purr Cat Café was started by celebrity Ploy Rattannarat and a friend. The place has a cat grooming salon, café and gallery with a cat hotel scheduled to open in 2013. Grooming starts from B450 and a signature groom for pageant competitions starts from B500. The café itself serves bakery treats (for us) and cat food. There are actually two zones: one for owners to bring their own cats and one where people can play with the store’s own furry friends. My Personal Stash – Infused Gin

Hello!

After reading an article on the Appetite Magazine about infusing spirits, i decided to lay my hands on something i’ve always wanted to do for a long time, making my personal stash of Infused-Gin!

Ingredients & Methods

Apple & Cinnamon Infused-Gin

8 x Candied Apples – i choose this because of the sweetness, you can use other apples as well

1 x Cinnamon Stick

500ml of Gin

  1. Sterilise the bottle/ jar (preferably with an airtight seal)
  2. Cut the apples into slices (you can cut in any ways you want)
  3. place the apples into the jar
  4. add in the cinnamon stick
  5. pour 500ml of Gin into the Jar
  6. Seal the jar tight

Lemongrass & Lime Infused-Gin

8 x Lime

3 x stalks of Lemongrass

500ml of Gin

  1. Sterilise the bottle/ jar (preferably with an airtight seal)
  2. Cut the lime into half (i prefer to remove the seeds)
  3. place the lime into the jar
  4. Cut the lemongrass – *trick use the bottom of the stem for more flavours
  5. Crush the stems of the lemongrass for more flavours
  6. Put the lemongrass into the jar
  7. pour 500ml of Gin into the Jar
  8. Seal the jar tight

The last parts to the method is to be PATIENT and leave it to infuse for approximately two weeks:)

Malat tasting @ Buyan Restaurant- Part 1

Good afternoon and i hope you’re enjoying your Saturday morning!

Today’s topic would be on Malat Winery, a family-owned winery based in Kremstal in the Niederosterreich region of Austria.

-NIEDEROSTERREICH- is Austria’s largest wine growing region with many sub-regions making exceptional wines.

Michael Malat, the 9th Generation of wine maker from Weingut Malat took over from his dad, Gerald Malat in 2008 after working at many important wineries in France, New Zealand, California and Argentina.

 “Austria is situated at the same latitude (between 47-48 degree north) as the famous Burgundy region in France? Austria is one of the World’s ideal cool climate wine regions that produce both fresh and complex white wines and spicy, elegant reds!”

A few days back, the Sommeliers and trade professionals in Singapore were in for a treat when we had the opportunity to taste some 20 wines, both red and whites from the Malat family dating back to the late 90s! Like the previous posts, I won’t be squeezing all the tasting notes into one article, but splitting into two parts. Let’s start with the Whites-Rieslings!

Riesling? That’s probably one of the questions you probably might be asking me, but yes, I’m not typing it wrong, we’re not talking about Gruner Vetliner today, but Rieslings!

Starting with the youngest 2011 to the 1998 vintage, Michael mentioned that the purpose of tasting it from the youngest to the oldest vintage is because the complexity of the wines would be more apparent as we move into the older vintages, we followed suit and it did!

 TASTING NOTES:

2011 Riesling das Beste

Nose:  aromas of honey, caramel, pineapple and pear

Palate: Oily and hints of pear and fresh minerality as the wine aerate through the mouth, ending with a mid – long finish

2010 Riesling das Beste

Nose:  a little tighter on the nose as compared to the 11’ vintage. Hints of floral, lychee, pineapples with minerals were significant.

Palate: Oily and a tat more acidic. Getting more floral and mineral notes compared to the fruits

2008 Riesling das Beste

Nose:  white flower, pineapple and peach

Palate: Oily and richer on the palate, hints of petroleum, ending with a mid finish

 2007 Riesling das Beste

Nose:  more complex on the first nose, minerals, hints of dried leaves, pineapples

Palate: Oily and hints of pineapple. Fresh with a good balance of acidity and structure.

2005 Riesling das Beste

Nose: a tat more savory on the nose, fresh white mushrooms, more floral then fruits. Honey-liked nose.

Palate: Oily and hints of pear and fresh apples after some aeration in the mouth, mid-long finish

 2002 Riesling das Beste

Nose:  candy, osmanthus and honey

Palate: fresh acidity with a well rounded structure. Long finish

1999 Riesling das Beste

Nose:  a little more complex, notes of pineapple, pear and apples with white flowers and hint of petroleum.

Palate: Oily and notes of apple and minerals were apparent. mid to low acidity

 1998 Riesling das Beste

Nose:  perfumy, smoky, scented mushrooms, aromas of honey, caramel, butterscotch, pineapple and pear

Palate: Fresh and lively, full of minerality with hints of pear and apple as the wine aerate through the mouth, ending with a long finish – good to keep for another 10 years
