Celebrate the love of food at the inaugural RWS Food Affair this September

For the first time ever, six of RWS’s celebrity chefs have come together to create a six-course dinner in a magnificent setting at the S.E.A. Aquarium’s Open Ocean habitat, home to more than 50,000 marine animals.

The Month of September seems to be the month for Foodies! In my previous post, i wrote about the Marina Bay Sands Hosting the Inaugural Sands for Singapore Festival in September and concurrently, the Resort World Sentosa is also back for some pumping actions in the kitchen!

The six chefs, from the world’s most Michelin-starred chef Joël Robuchon to the first female Iron Chef of Iron Chef America fame Cat Cora, have each designed a course for this dinner.  From fine French haute-cuisine to authentic Cantonese soup, diners can feast on the best that RWS has to offer at one seating. In a unique setting like no other, diners will also be enthralled by the magnificent view of manta rays, leopard sharks and goliath groupers before them in the Open Ocean habitat.

Begin the exquisite dinner with Le Caviar Imperial by Joël Robuchon, followed by Steamed Marble Goby with Forest Mushroom sauce by Sam Leong, a nourishing soup of Double Boiled Cordyceps Flower with quail and conch meat by Chef Li Kwok Kwong, Salmon Roulade accompanied with sweet Hokkaido Scallop & Fried Octopus by Cat Cora, Beef Short Rib by Douglas Tay, and a sweet temptation of yuzu mango cremeux by Executive pastry chef Kenny Kong.

OH MY GOODNESS!! HOW CAN YOU MISS THIS!

Ocean Restaurant by Cat Cora – At Ocean Restaurant by Cat Cora, a five-course set dinner will feature Iron Chef Cat Cora’s signature Mediterranean-Californian dishes such as Salmon, Scallop & Lobster accompanied with Cauliflower Puree; Sautéed Garden Peas & Shellfish Emulsion and Kurobuta Pork Belly and Fried Octopus with Sauerkraut Puree, Cabbage Roll and Spicy Mustard sauce.   During this period, diners may also catch a glimpse of the friendly chef who has starred in TV shows like Around the World in 80 Plates and The Next Iron Chef.

Osia – Helmed by Celebrity Chef Scott Webster and Chef de Cuisine Douglas Tay, Osia showcases contemporary western dishes characterized by the natural flavours and essence extracted from premium ingredients. For RWS Food Affair, award winning Chef de Cuisine Douglas Tay has set out to create a delectable menu with inspirations from Western Australia combined with Asian influences using fresh Australian produce.  For mains, choose to indulge in grilled sea perch with Sesame Ratte Potatoes or Tasmanian Milk Fed Lamb Short Loin and Rib with Swede Carrot Puree. Along with Chef Douglas’s keen emphasis on precision and meticulous cooking techniques, expect no less than a spectacular feast for both the eyes and palates.

Feng Shui Inn – The Man Han Quan Xi (满汉全席) was an imperial feast served only to emperors during the Qing Dynasty, with more than a hundred delicacies served over three days.   Dine like a king at the RWS Food Affair, as Chinese Head Chef Li Kwok Kwong and his team of chefs have taken inspiration from this imperial feast and recreated traditional dishes with a modern twist.  The six-course dinner menu will feature delicacies such as Double-Boiled “Changbai” Mountain Wild Ginseng with Farm Chicken and Braised Kurobuta Meat with Alaska Crab Claw.

Forest森 – Forest森 redefines the art of Chinese fine dining, with a western approach to the presentation of its dishes.  Local celebrity chef Sam Leong has created a six-course dinner featuring his signature innovative contemporary Chinese dishes such as Hot and Sour Seafood Broth with Hokkaido Sea-Urchin; slow-cooked Wagyu Beef Cheek with Spiced Cumin and Steamed New Zealand Cod with Yuzu Mushroom Sauce.  Sam Leong will also hold a special masterclass that comes with a four-course lunch.

Tangerine – At Tangerine, the spa café located at ESPA at RWS, husband-wife duo Sam and Forest Leong have combined efforts to create dishes using nutritious ingredients and healthy cooking methods without compromising on flavor.

For the RWS Food Affair, Tangerine will feature a lunch and dinner set featuring dishes like the fresh and healthy appetizer of Crisp Summer Green & Cress Salad dressed with Extra Virgin Coconut Vinaigrette, and Chef Forest’s Sous-Vide Salmon accompanied with Olive Dust and Confit Tomato and Green Pea Mash.

All i wanna say is that they don’t really care about us!

Amidst the Hazy days in Singapore and a record breaking PSI level of 321, many of us felt how it’ll probably be like locked in Hell with burning hot temperature and smoky “backdrop” surrounding us. A good look over Facebook would see almost 90% of my news feed complaining about the haze that’s caused by our Indonesian counterparts who are happily burning the rainforest and ruining the entire eco-system for what we call, MONETARY BENEFITS.

No! That’s not photoshop, neither is it some computer effects, that’s my country, Singapore, a tiny island with a population of almost 6 million people – YES, that’s the amount of people you’re killing! For the past few days, we’ve seen it, we’ve felt it and we HATE it!

I’m pleading for the Indonesian government to do something to this, for the past years, we’ve been tolerating this SHIT, but why are they not doing ANYTHING? Even if they did do something, it’s clearly INEFFECTIVE!

This is not the 1st, not the 2nd, neither is it the 3rd, but it has been close to a decade of burning the rainforest after countless attempts from neighbouring countries to STOP it!

So my fellow HUMAN beings, WHY are you doing this?

Have you cared for the SICK

Have you cared for the OLD

Have you cared for the CHILDREN

Have you even spared a thought for your OWN loved ones!

STOP your burning, STOP your bribes, STOP your BULLSHIT!

Leaving you with a song from the Originals of Michael Jackson – They Don’t Care About Us!

Made by Lauren Jasmine – 07062013

By Surprise!

Yes, i was just leaving the office to collect my business cards and i came across a pretty interesting concept by Lauren Jasmine, a fashion boutique & cafe.

580612_620071814672365_2019892949_n

So yeah, i thought that such concepts should be recognised and also, more importantly shown to the public. I decided to then get a cup of Iced-Latte (though i’m not really a person who enjoys iced-cold coffees) just because the weather was really REALLY warm today!

Back in the 90s, or maybe the 00’s we’ve seen many concepts and cafes coming out with brand new ideas, concepts and strategies, but i reckon, the closest to my heart, is how to link  food, beverage and fashion as one. One of such examples with a more commercial approach would be the Island Cafe by Tangs.

Well, i’ve been very much into this because i believe, fashion and food & beverage is about squeezing the creativity juice and enjoying the finer things in life. Well, for some of you who have been reading my posts on TheDrinkingMarket, you would have realised that i’ve spoken much about linking food, drinks and fashion as one, an example would be the interview i did with the Signature French Wines back in May during the Audi Fashion Festival.

Does fashion really blends with F&B? Hmmm…. maybe it really does! Think about it, have you seen any… i mean ANY shopping malls or fashion streets without food and drinks?

Have a thought through, even Louis Vuitton’s flagship store in Paris have a cafe inside their boutique!

madonna-cafe-figaro-louis-vuitton-ads-1

“Apart from big department stores, the project of launching Cafés in a luxury store already exists. For instance, if you visit to the Chanel boutique on Rue Cambon in Paris, you will notice a special room designed especially for business men or women to watch financial channels on a TV as they do their shopping…” – Hype Means Everything

The question now is can we bring that concept into Singapore? Or maybe even Asia? When i say bring it in, i mean can we make money from it? Or perhaps it’s just a fantasy?

Well, i think we could and i highly recommend fashion and F&B to come together as one!

Signing off!

Catching up @ Audi Fashion Festival

Hi TDMers!

Howdy! I’m finally a little more free after settling what i have on hand! Now, it’s about time to settle  the questionnaires! For some of you, i’ve replied you on the side already, and the rest of you TDMers, i’ll be picking three questions to reply;

Qn: I heard that this year’s AFF is really big and i even hear people talking about it in Paris is it really that popular?

Ans: Well, the Audi Fashion Festival is in its 5th year and with that, they have moved to a much bigger venue at the Marina Promenade with a new waterfront location against the backdrop of Singapore’s skyline & a bigger tent that targets to attract more than 20,000 visitors, up from 13,200 in 2012.

From the world’s most revered designers and international top models to red carpet fashion galas and glamorous after-parties with headlining international acts, the Audi Fashion Festival will be the biggest fashion event of the year, with the support of the Singapore Tourism Board. In previous years, AFF showcased collections from world-known brands such as Christian Lacroix, Vivienne Westwood, Zac Posen, Mugler with Nicola Formichetti, Roland Mouret, Gareth Pugh, Marc by Marc Jacobs, Missoni, Ungaro, Erdem, DSquared, Roberto Cavalli as well as local fashion heroes like Raoul and alldressedup. Themed “Crafting the Future”, this year’s festival spreads over 5 days of shows featuring a mix of emerging and established top-class names from the international world of fashion including Carolina Herrera, Hussein Chalayan, Peter Pilotto, Tsumori Chisato, Collette Dinnigan, RAOUL, Ashley Isham, Zardoze, Jun Okamoto and Ong Shunmugam.

So it’s definitely not surprising that it’s starting to gain reputation all over the World!

Qn: I know that some of the designers are involved in this AFF and i see one of them, my fellow Mongolian designer, Kudos!

Ans: Yes, The Audi Fashion Festival does not only support the big brands, but also, the aspiring new talents, one of which is Batmunkh Uugantuya, a Mongolian designer that takes her inspiration from her homeland. Also, revealing this year’s winner of the Audi Star Creation, they are; Roderic Wong, 28 (China), Ko Youngji, 33 (Korea) and Soravit Kaewkamon, 24 (Thailand). Congratulations! Qn: I heard that there are some stuff going on at the Audi Fashion Festival, tell me more!

Ans: Yes! There are quite a lot of things going on at this year’s AFF! There was the test drive of the Audi A3 that is launching in Singapore, the BLUEPRINT, also known as the Asia Fashion Exchange, a multi-faceted tradeshow for both regional and international brands in the region, BLUEPRINT enjoys substantial domestic and overseas buyer and media attendance annually. It aims to offer exciting sales and networking opportunities delivered with a uniquely personal touch.

The Wine Voyage, the team behind Singapore’s biggest outdoor wine fair, Singapore Wine Fiesta, has partnered with Audi Fashion Festival to bring a wine and culinary event, Wine Voyage, into the fashion world. Jointly organised by The Straits Wine Company and Mercury Marketing & Communications, Wine Voyage takes guests through a discovery of wine and gourmet food of the fashion capitals of the world – Berlin, Madrid, Milan, Paris, Sydney and Singapore.

Last but not least, not forgetting the Fashion Café – MU Parlour, The Boathouse and Spathe Public House offered an array of cakes, pastries and sandwiches with a local twist to be savoured with a glass of champagne, artisanal coffee and teas!

So was it fun? YES!!!
